Lemon Curd

Ingredients

1 cup sugar

1/2 c lemon juice

1 grated zest from one lemon

1/4 c butter

3 eggs, beaten

Directions

1. Combine all ingredients in a medium saucepan (heavy bottomed is better) over medium heat. Stir constantly (with a whisk if you have one) until it thickens. I wait until the first bubbles bloop in the middle, but don't let it really boil or it might curdle. It takes about 10 minutes.

Notes

If you want a quick gift, seal it in a couple of small jelly jars. If it's for you, pour it into a larger jar and refrigerate. Makes about 2 and 1/2 cups. I often double this, it doesn't take that much longer to heat up. You can also make a tiny batch if you only have 1 egg and 1 very juicy lemon.

If it curdles, it means you heated it too fast or let it get too hot. Don't throw it away. The texture will be kind of grainy and it won't look as pretty, but it will still taste good.

If making orange curd, use less sugar, try equal parts juice and sugar, or perhaps less sugar than juice, and maybe add the juice of a lemon, as well.
